Bourgogne Aligoté 2022
The Aligoté grape variety produces more nervous and precocious wines than Chardonnay.
From the north to the south of Burgundy, nearly 1,600 hectares are dedicated to it, there are as many profiles of Aligoté as there are areas where they are produced.

Vinification method: The harvest is done mechanically, the grapes are pressed as soon as they arrive in a pneumatic press. The must is cooled then put in storage to be settled 24 hours later. The must is fermented in vats where the temperature will be regulated at 17-18°. After the alcoholic fermentation, malolactic fermentation will take place and bottling will take place in the spring after light filtration.
Tasting: The wine attacks with charm and has good fruit on the palate, we find lemony notes, the palate is lively and pleasant, we have an impression of power in the finish.
Food/wine pairing: Serve as an aperitif accompanied by gougères or with a parsley ham.
Bourgogne Chardonnay 2022
Terroir: The Generic Burgundy appellation extends over 3200 hectares from the Yonne to the south of the Maconnais.
The Bourgogne Blanc wines offer the aromas of Chardonnay with nuances linked to their origins. This plot is ideally located in the centre of Meursault, it adjoins the great terroirs.
They have a custody of 2 to 5 years.
Grape variety: Chardonnay
Vinification method: The harvest is done manually, the grapes are put in the press as soon as they arrive, they will undergo a slow and respectful pressing. The juices obtained are cooled and settled for 24 hours.
After racking, the clear juices are fermented in vats for the entirety.
Alcoholic fermentation lasts from 15 to 20 days depending on the year, the pieces are then completed, the second fermentation generally takes place in the spring following the harvest.
The wine is aged for six months, and is bottled after a slight filtration in June following the harvest.
Tasting notes: In the glass of this 2022, green gold and shiny, with a mineral nose, ample and fresh on the palate, the finish is underlined by a nice minerality.
Built on freshness and softened by a touch of butter, a beautiful balance.
Food and wine pairing: To accompany pike dumplings with Nantua sauce.
Bourgogne Pinot Noir Côte D’or 2022
Area: 2 Ha30 ares spread over three plots located between Pommard and Meursault
Production : 20 000 Bouteilles
Cépage: Pinot Noir
Sols: Argilo-calcaire
Vinification method: The harvest is done mechanically, the grapes are destemmed as soon as they arrive and then put into vats. The grapes are cooled and then cold macerated for 5 to 6 days, then alcoholic fermentation takes place where twice a day the vats are punched down and brought up, the temperature will be regulated to 30-32°. After the alcoholic fermentation comes the devatting which consists of pressing the solid part of the harvest, the free-run and press juices are blended and put into barrels where Malolactic fermentation will take place. The wine is aged for 10 to 12 months depending on the vintage and is bottled just before the next harvest after a light filtration.
Tasting notes: Adorned with a beautiful, intense ruby, this Burgundy immediately seduces with its flattering nose of stewed fruit. The charm also operates on the palate: both fresh and fleshy, the wine reveals aromas of very ripe cherry enhanced with spices, underpinned by melted tannins. A silky wine to drink now.
